Everyone loves to have a delicious chicken on their weekends. If they want to have a wonderful dish then here is a recipe for you. South Indian chicken is really more spicy and wonderful to taste it. It is also called as South Indian Chicken Curry or south Indian chicken gravy.
Ingredients :
- 500 grams Chicken
- 2 medium onions
- 2 medium tomatos
- small ginger
- 3-4 green chilles
- half piece of coconut
- 3-5 chilles
- bay leaves
- 6 -7 cashew nuts
- ginger garlic paste
- half tbsp jeera
- half tbsp turmeric
- 2 tbsp chilli powder
- 3 -4 tbsp oil
- salt to taste
Preparation of Spicy South Indian Chicken Gravy: Finely chop onions, tomatoes and ginger and place it separately. cut the coconut into small pieces. put it into a mixer add the cashew nuts an 2 or 3 green chilles, grind it into a fine paste for 2 - 3 minutes and keep it aside.
Take a cooker, add 2 or 3 tbsp of oil and add 2 or 3 bay leaves, jeera, and green chilles.Now add finely chopped onions,tomatoes and ginger and fry till the onions turns fried red. Now add the prepared coconut & cashew paste. Add chilli power, turmeric powder and salt to taste. close cooker lid and wait for 4 minutes to cooker to whistle, turn the stove to medium flame and wait for 2 more minutes still the pressure goes off and open the lid add coriander leaves and oil and serve it hot with rice or rotties.

Diwali Sweets and Snacks
Sweet Appam
Sweet appam is a delicious sweet prepared during diwali.
This sweet will be very soft and tasty. They are sure to be liked by all the
members in the family. This sweet Appam can be stored for many days and can be
consumed.
Ingredients:
Maida Flour – 1 Cup
Sugar – 1 cup
Egg – 2 Nos
Banana – 2 Nos (Small ones)
Elachi – 5 Nos
Ghee – ½ Cup
Preparation:
Take the maida flour in a non-stick vessel and add sugar to
it. Make it into batter by adding water to it slowly. Take a cup and beat the
eggs well. Add the eggs in the batter and mix well. Crush the bananas well and
add them in the batter. Crush the elachi and add them to the batter and mix
well. The batter should not be very thick or loose. It should be semi solid. Leave
the batter aside for half and hour.
After half an hour take a flat frying pan and heat it. Now
take the batter and pour in the pan in the shape of small dosas. The size of
the appam should be not bigger than our palm. Pour ghee on top of the appam and
to its sides and let it fry well. Turn the appam and fry well the color changes
to golden brown.
Once the appam is cooked well remove it from the pan and it
is ready to be served. This tender and soft appam will definitely be enjoyed by
all the kids and elders. This appam could also be prepared with wheat flour or
ragi flour instead of the maida flour. The preparation method is the same for
both wheat and ragi flour. This sweet would be a healthy choice too since it
contains eggs and banana.
Note : This sweet can be prepared with out the eggs too.

Diwali Sweets and Snacks Thattai
Thattai is a traditional snack prepared during diwali. The lighter and crispier thattai will be definitely loved by all the elders and children. This snack could be prepared using the readily available ingredients in our home. The ingredients involved in the preparation are very simple and are sure to be available in everyone’s house.
Ingredients:
Rice flour – 1 cup
Urad dhal – 2 table spoon
Fried Bengal gram – 2 table spoon
Channa dhal– 2 table spoon
White sesame seeds – 1 tea spoon
Chilli powder – 1 table spoon
Ghee – 2 table spoon
Salt – As per requirement
Asafoedita – A small pinch
Oil – For frying
Plastic paper – medium size
Preparation:
In a flat bottomed vessel add the rice flour and fry it for 2 to 3 minutes. Keep the rice flour aside. Now add the urad dhal, fried Bengal gram, channa dhal and fry them well in low flame. They have to be mixed well and fried. Do not over fry them since that would change the taste of the dish. Frying them for three to four minutes would suffice. Later cool them well and make a powder by grinding them in a mixer.
Now in a non- stick vessel (the non-stick vessel is better because the flour wont stick to the vessel when kneaded) add the rice flour along with the powdered ingredients. Add the white sesame seeds, chilli powder, ghee and asafoedita along with salt. Mix them well by adding water. Be very careful while adding water since the dough should not be very
loose.
Take the plastic paper and apply oil to it (so that the dough doesn’t stick to it). Make small balls with the dough (apply oil to the hands while making the balls) and flatten them in the paper. Remember the thinner the dough the crispier the thattai.
Boil oil in frying pan and put it in medium flame. Now slowly transfer the dough from the paper to the pan. Leave the pan in medium flame. Fry them well. Remove them from the pan when they turn golden brown and place them in a container. Cover the container after few minutes. Now the tastier and crispier thattai are ready to the served.
They go very well as an evening snack and also along with rice. The preparation time would be 20 to 30 minutes depending on one’s speed. But this is a very easy and quick snack.

Jaggery is one of the ingredients with which you can able to prepare various sweet dishes such as paayasam, Modak and many more. Do you know that Jaggery also contains the healthy ingredients like iron. But, the Jaggery which is available in the market consist of sand. So it is better to clean before using it.
Ingredients for preparing peanut chikki:
500 gram Jaggery,
50 ML water,
half cup peanuts,
two tablespoon ghee,
one tablespoon oil.
Preparation method of peanut chikki:
filter the Jaggery:
take a nonstick pan on medium heat. Now you can add Jaggery with one by fourth cup of water. Within 15 min, Jaggery will melt fully and get dissolved and becomes into a smooth solution without any lump. When you find lots of bubbles on the top of Jaggery, at the time, you can just switch on the stump and filled it with the iron sieve. Now let it cool until it becomes to room temperature. You can even store them into a plastic container and place it in the refrigerator for later use.
Preparation of groundnut chikki:
just heat up a pan, and dry roast peanuts without adding any oil until it becomes crispy. Keep it aside for 20 min and gently remove the skin of the peanuts. By dry roasting the peanuts, you can very easily remove the skin of it.
Just apply oil on a plate and keep it ready a side. Now take a nonstick pan, add two tablespoon of ghee and melted jaggery. Let it boil on low heat for 10 min continuously. It automatically becomes thicker and now you can add roasted groundnut onto it. Now you must just cook it for 5 to 7 min and if you cook for more minutes, it may become hard mixture and it is difficult to spread on the plate.
Now you can put the content onto the plate. When it gets cold down, cut it into a square shape and you can have them has the snacks.
You can even prepare groundnut chikki in an microwave.

Lets see the ingredients required for this recipe:
1) Wrapper :
-
2 cups of Maida
-
¾ cup of water
2) Filling :
-
500g minced chicken
-
2-3 onions
-
1 tbsp fresh crushed ginger
-
1 1/2 tbsp crushed garlic
-
1 1/2 tsp salt Handful of coriander
-
2 tbsp soy sauce
-
1 tbsp vinegar
-
2 green chillies (remove seeds for less spice)
-
2 tsp garam masala
-
2 tbsp oil
DIRECTIONS :
1) Finely chop all the filling ingredients and mix together . pour 2 tbsp of oil in a pan and fry this mixture , followed by it add 2 tbsp of soy sauce + 1 tbsp of vinegar and sprinkle 1 tsp of garam masala + salt to taste. Mix it well and cook it for 10 mins.
2) Mix the wrapper ingredients to make a dough. Roll the dough and make circles 6-10 cm across.
3) Place a scoop of mixture in the middle of each circle and wet the edges to glue easier. Stick the sides together strongly to stop leakage.
4) If u have a steamer pour some water into it and place these filled momos onto the plates and steam it for 10 mins. If u don’t have a steamer we can use Idli cooker and then filled momos can be placed onto the idli plates.
5) After 10 mins momos would be ready to serve. U may serve it with some Red hot chilli sauce or Tomato sauce.

Onam is one of the very important festival in Kerala. In Kerala people used to prepare some food during Onam which is very much essential for that day. That recipe is Rice Puttu. Usually puttu will be made through steam. So it is good for our digestive system. This kind of puttu is very tasty and easy to prepare. You can get puttu maker in the market to make any kind of puttu.
Ingredients
Coconut - 2 to 3 cups
Rice Flour - 4 to 5 cups
Salt - To taste
How to make Rice Puttu
Boil some water in Puttu pan.
Mix up the rice flour with salt Water
Fill it in the Puttu container
Cook for 15 mins in medium flame.

Many people think that preparing the cake at home is really very difficult. But in fact, it is really very easy because you can able to get various ready-made products in the market. You already might have heard about the milkmaid condensed milk which is available in various supermarkets. If you get that, you can able to prepare the eggless cake when easily at home.
Eggless vanilla sponge cake Ingredients:

1 cup of maida,

1 1/2 tablespoon of baking powder,

75 ML water,
-
half tablespoon of cooking soda,
-
200 g of milkmaid condensed milk,
-
70 ML of melted butter
-
one tablespoon of vanilla essence.
Preparation method of home-made Eggless vanilla sponge cake:
-
take the flour, baking powder and cooking soda together and keep it as it (content 1) .

In another bowl, just combine the condensed milk, melted butter and vanilla essence with a 75 ML of water and stir it well.

It's both the above mixture and well with spatula and the batter should be in drooping consistency.

Take a microwave oven plate and apply all on it. Now you can pour the batter and bake it in preheated over at 200° for 10 min. After that, you can reduce the temperature and bake it up to 150° for another 15 min.

Now it is ready and you can remove it from the over and keep it aside for 1 min. Just invert the plate and tap sharply to unmold the cake.

And ginger garlic paste, cumin powder, coconut powder, coriander powder, salt and cook it for 15 min. Just place the boiled eggs into it.

Now you can add the washed onions, chilli pieces, coriander and mint leaves. Cook it well for 5 min and you can get a fine smell out of it. Half tablespoon of ginger garlic paste and stir well.
Add chicken pieces and curd into it and cook it for 5 to 10 min. Now you can add the soaked basmati rice into it and let the rice get fry. Pour 4 cups of water into it with salt has put the taste. Put 2 to 3 drops of oil and close the pressure cooker with its lid. Wait until 2 to 3 vessel and switch off the stove. When the pressure goes out you can open the cooker and serve it hot with curd chutney or bagara baingan.

stuffed chilly bajji is one of the wonderful dish which is really very hot and spicy. This dish is prepared with large chilly. This dish mostly seen in Hyderabad. It is an excellent snack or appetizer during the evening. Some people love to use stuffing in between the chilly which will enhance the taste for avoiding more spiciness.
Ingredients needed for Mirapakaya Bajji:
- 5 large chilly,
- one tablespoon chilli powder,
- salt to taste,
- 1 cup of besan flour (Gram flour, kadala mavu, senaga pindi).
- 3 to 4 tablespoon of maida.
- Pinch of cooking soda.
- Some people love to have stuffing into the chilly with which they can able to avoid the spiciness.
Preparation method of stuffing for Mirchi :
for this, you need to grind all the ingredients like tamarind, peanuts, porikadala and salt into a fine paste without adding much water. It must be thick enough so that the stuffing won't come out.
Preparation method of milagai bajji:

Vada is one of the popular dish in Andhra Pradesh, Karnataka, Canada, Maharashtra, Tamil Nadu, Orissa and Sri Lanka. They either in victory different types of vada available and among them now I would like to tell about a unique vada which is really very healthy because it is prepared with urad dal. Urad dal Vada is having different names such as Medu Vada, Ulundu Vada, Urad dal Vada, Uzhunna Vada, Uzhundhu vada. It is also called as Garelu in telugu. If you add some onions into this then it is called is “ulli garelu”. You can grind the urad dal either in grinder or mixer.
If you grind urad dal in mixer, then you need to steer it was with your hands so that the air bubbles will occur on the mixture. If it is grinded in grinder, then you don't need to mix it well because the grinder will do that work.
Ingredients for Medu Vada:
- 1 cup of urad dal,
- 10 curry leaves,
- 5 to 6 pepper seeds,
- 1 onion chopped into fine pieces,
preparation method of Garelu:
soak urad dal in water for six hours and then grind it into the mixer with sufficient amount of water.( See that you won't put too much of water it must be semi-solid). You must be able to do doughnut and drop it into the oil. The grinder mixture must not be much softer and much harder. After grinding this mixture, you can add onions, chilli pieces, pepper seeds, curry leaves. Now let this mixture for half an hour.After that, place the oil on stove and let the oil heat up well. Now prepared doughnut or disk shaped above 5 and 8 cm across and drop it into the oil. Remove it when it gets golden brown in colour. You can serve this wonderful Uzhundhu vada with

You can able to prepare check me with this coriander leaves and have it as a side dish for dosai or you can even have it with rice. Now let's learn how to prepare this delicious and wonderful dish.
Ingredients:
half tablespoon of mustard seeds,
half tablespoon of urad dal,
5 to 6 curry leaves,
one bunch of washed coriander leaves,
2 to 3 pieces of coconut,

preparation method of coriander chutney:
preparing this dish is really very easy, firstly you need to soak coriander leaves into the water so that it does not contain any mud. Let it dry for a few minutes. Now you can add all the ingredients such as coconut pieces, coriander, coconut pieces and try it for 5 min. When it gets cool down when you can take it into a grinder and make it into a fine paste.

You might have seen various types of South Indian dishes but now I would like to tell about a best and spicy south Indian curry which goes good with rice. Preparing process is also very easy and it can be done just with an 15 min.
Ingredients:
one big onion, sliced into pieces
3 cups of thick coconut milk
half table spoon of sompu,
one tablespoon of jeera,
2 tomatoes( sliced into pieces),
one tablespoon of ginger garlic paste,
500 g chicken
Salt to taste,
one tablespoon of chilli powder,
pinch of turmeric,
one tablespoon of garam masala powder (or) whole garam masala.
Preparation method of South Indian curry recipe:
take half kg chicken and wash it thoroughly and keep it aside. Now let's prepare masala for the South Indian curry. Take a mixer add onions, tomatoes, sompu, jeera, whole garam masala, ginger garlic paste and make it into a fine paste.
Now take a pressure cooker, add two tablespoon of oil per chicken pieces and fry it for 2 min. Now you can add the masala which is prepared above. Add some more ingredients like salt, pinch of turmeric and chilli powder. Now close the lid and wait for the whistle. Now you can keep it low flame and cook it for 10 min. After that you can remove it and serve it hot with rice. It is really spicy and even delicious.

This dish is called with various names such as Cabbage Curry (or) Cabbage fry (or) Cabbage Vepudu (or) Cabbage thoran (or) Cabbage Salan.
Ingredients for preparing cabbage curry:
1 cabbage (grated finely)
10 curry leaves,
1/2 tablespoon of urad dal,
3 chilli ( chopped),
1/2 tablespoon of mustard seeds,
1/2 tablespoon of channa dal,
1 cup of grated coconut.
2 cup of water,
salt as per the taste.
Preparation method of Cabbage Vepudu:
before starting the process, you need to boil the cabbage for 2 min in the hot water by adding little amount of salt. It will help you in removing the smell from the cabbage and gives it bright look. See that you will strain the water well out of cabbage well. Keep it aside for one hour so that water will get off from the cabbage.
take the pan, put 2 to 3 tablespoon of oil. Now you can add the ingredients like mustard seeds, urad dal, Channa dal, chilli pieces and let it dry for 2 to 3 min. Now you can add the cabbage into it and let it fry for 2 min. Now you can add the grated coconut and put off the stove. You can serve this to your family which is really healthy and delicious.

Mudda Pappu is one of the simple and wonderful dish and Andhra Pradesh. It just takes five minutes of time to prepare this dish. It is also called as Paruppu in Tamil.
Ingredients for preparing Pappu:
Preparation process of Mudda papu:
take a pan and dry roasted for few minutes. Then put this Toor Dal into the pressure cooker, add water and pinch of turmeric to it. Close the pressure cooker and wait until 5 to 6 whistle.
Always remember that the salt must be added at the end. It is rich in protein so it is healthy to eat. The side dish for this mudda papu would be vankaya pulusu.

Now I'm going to tell about a wonderful snack which is very popular in India. You already might have heard about Crispy Aloo Samosa which is very easy to prepare. For preparing this wonderful Potato Samosa at home. You need to get some ingredients like listed below:
INGREDIENTS:-
For samosa sheets:
For the stuffing:

2 potatoes boiled and diced

1 tbsginger garlic paste
-
1/4 tsp tumeric
-
coriander powder
-
coriander leaves chopped
-
cumin powder
-
2 to 3 green chillies finely chopped

1 tbs of red chilly powder
- 1 spoon of chat masala
-
1/2 tsp cumin seeds
- 2 to 3 spoons of lime juice
- salt to taste
PREPARATION OF ALOO SAMOSA:
firstly, learn how to prepare dought for alu samosa.

Take maida into a bowel and add ajwain seeds, salt and oil. Mix it well, so that each flour great will be coated with the oil and gives the crunchiness. Now you can add water little by little and kneading properly. Let it rest for 15 to 20 minutes.
Potato Stuffing for Aloo Samosa:

take a pan, add oil, cumin seeds, ginger garlic paste, green chilies, cashew and turmeric. Mix it well and let it cook for a few minutes and then you can and red chilli powder, coriander powder and cumin powder. Add a little amount of water so that the masala won't get burned.

prepare small balls of dought and roll them into oval shape. Cut that into two halves apply. Take one half of the oval dought and apply water on all edges.

Today I'm going to tell about the wonderful preparation about how to prepare this Ven Pongal. Below are the list of ingredients which are needed for preparing it. It just takes 5 min to prepare this wonderful dish.

- half cup yellow moong dal (split moong dal),
- 5 cup of water,

Sambar is one of the wonderful dish which is excellent it taste and even have a healthy vitamins and minerals which are needed for the body. We can say that this sambar consist of vegetable stew which gives a wonderful taste. Everyone loves to taste to this sambar in South India such as Tamil Nadu. Everyone believes that the taste of Tamil Nadu sambar is really perfect.
Below is the recipe for preparing the Kerala sambar at home. You can serve this samba with
Idli,
ven pongal, Dosai, Medu Vada.
Ingredients:

Now you can add samba powder, Hing, salt, very little amount of tamarind pulp juice. And just wait for one whistle. Now you can remove it from the flame. Now the samba is ready to serve but you must remember that you need to garnish it it. The process of publishing called as talimpu. Take pan and add two tablespoon of oil. Now you can add mustard seeds, cumin seeds, Curry leaves. And let it crackle. Now you can add this on to the sambar. Now you can serve hot sambar with your dish.
