Ingredients for Bindhi Masala

Lady’s finger – 20 Nos

Onion – 1 (big)

Tomato – 2 Nos

Ginger – small piece

Garlic – 4 Nos

Green Chilies – 4 Nos

Curd – 1 cup

Coconut – Little

Cashews – 5 Nos

Butter – As per requirement

Salt – As per requirement

Coriander leaves – Little

Preparation Method for Bindhi Masala

Cut the lady’s finder in to small pieces. Take a deep frying pan and add two table spoons of butter to it. Once it gets heated up add the cut lady’s finger and fry well. Fry it for three minutes and remove it from the flame and transfer it into a plate. Cut the onion into very small pieces. Make a paste of the tomatoes by grinding it. Also make a paste of ginger and garlic.

In the same frying pan, add five table spoons of butter. Add the finely chopped onions and green chilies to it and fry it well till it turns golden brown. Add the ginger garlic paste to it and stir well. Add the tomato paste to it and slow down the flame. After two minutes add the fried lady’s finger to the content and mix well. After two minutes add one cup of curd to the content and mix well. Add salt as per requirement.

Grind the coconut and cashews. Make it into a thick paste. Add the paste to the content in the pan and mix well. Leave it in low flame for four minutes. Remove it from the stove and serve it hot. Delicious bindhi masala is ready to eat.

Lady’s finger is supposed to be a very good vegetable, but most of us avoid it due to its gel like feel. But when lady’s finger is prepared in this method, it would be very tasty. This dish would taste great with chapattis, parathas and even rice.

Tomato – 1 (Medium Size)

Curd – 2 Cups

Salt – As per requirement

Chat Masala – ½ table spoon

Preparation Method for Cucumber – Tomato Salad

Remove the skin of the cucumber and cut it into small pieces in round shape. Cut each of the round pieces into four parts. Similarly cut the tomato and keep it aside. Take a bowl and add curd in it. Stir well and add salt. Add the cut cucumber and tomato pieces in the bowl and mix well.

Add the pepper power to the content and mix well. Later add the chat masala and mix well. Finally add the lemon juice to the content and mix well. Finally add the coriander finely chopped coriander leaves and garnish the salad.

This salad is very easy to prepare and it does not require much work. This salad contains cucumber and tomato which are very good for health. Lemon juice will add good flavor to the salad. This salad will be very good during summer since it contains curd and cucumber which are supposed to be very good cooling agent.

Egg - 2 Nos


Onion - 1 No


Tomato - 2 Nos


Green Chilies - 2 Nos


Pepper powder - ½ table spoon


Turmeric - ½ table spoon


Ginger garlic paste - 1 table spoon


Mustard seed - ½ table spoons


Curry leaves - Little


Coriander leavers - Little


Preparation Method of Egg Masala


Boil the 2 eggs in a vessel for five minutes and keep it aside. In a deep frying pan add oil, once it gets heated up add the mustard seeds. Add the finely chopped onions to the pan. Also add the finely chopped green chilies. Fry it well for two minutes. Add the curry leaves to the pan. Grind the tomatoes in a mixer and make it a paste.


Add the tomato paste to the frying pan and mix well. Add the ginger garlic paste to the content and mix well. Add the pepper powder and turmeric and mix well. Take the eggs and cut them horizontally into two halves. Put the eggs in the content and mix well. Do not mix too hard since the eggs would break.


Leave the content in the flame for two minutes and remove it from the flame. Add the coriander leaves and garnish it well. Now the egg masala is ready to be served. This would be perfect side dish for chappatis, parathas and white rice.

Ingredients for preparing Vegetable Bread Upma

Bread – 5 Nos

Onion – 1 No

Tomato – 1 No

Carrot – 1 No

Beans – 4 Nos

Peas – ¼ Cup

Green Chilies – 4 Nos

Toor Dhal – ½ table spoon

Mustard Seeds – ½ table spoon

Cumin seeds – ½ table spoon

Oil – 4 Table Spoon

Salt – As per requirement

Lemon juice – 1 table spoon

 

Preparation Method for Vegetable Bread Upma

Cut the carrot, beans into small pieces and boil them along with green peas by pouring half cup of water. Do not pour excess water since the vegetable would become paste. Once it is boiled leave it aside and do not drain the excess water.

Take a deep frying pan and add four table spoon of oil in it. Once it gets heated add the mustard seeds, cumin seeds and toor dhal in it. After few minutes add the finely chopped onions in it. Add the finely chopped green chilies to the pan and fry well. Also add the tomatoes to the pan and fry well.

Now add the boiled vegetable to the pan and fry well. Add salt to the content and mix well. Do not fry for long time since the vegetables are already boiled. Remove the corners of the bread and cut them into small pieces. Put these small pieces in the pan and fry well.

After two minutes remove the pan from the flame and leave it aside. Add one table spoon of lime juice to the pan and mix well. Now the vegetable bread upma is ready to be served. It tastes best with coconut, coriander and mint chutney.

Oats – 2 Cups

Milk – 2 Cups

Curd – 1 Cup

Badam – 5 Nos

Pista – 5 Nos

Raisins – 5 Nos

Cashews – 5 Nos

Apple juice – ½ cup

Apple – ¼ cup

Orange – ¼ cup

Mango - ¼ cup

Pineapple – ¼ cup

Banana – ¼ cup

Sugar – 1 Cup

 

Preparation Method for Oats Muesli:

Take two cups of oats and soak them in 2 cups of milk. Add one cup of sugar to it and mix well. After five minutes add one cups of curd to it and mix well. Take the badam, pista, raisings, cashews and crush them well (Do not crush them too much since they will become powder).

Cut the fruits into small pieces. Add all the pieces to the oats and mix well. Add half cup of apple juice in the oats mixture and mix well.

After two minutes the content would be read to be served. This is very healthy muesli and it does not take more than fifteen minutes for the preparation. It does not require any heating and hence all the vitamins are stored well in the oats muesli.

This healthy oats muesli could be served for break fast and kids would love to eat it. It has the goodness of oats, nuts and fruits.

Rice powder – ¼ cup

Corn flour – ¼ cup

Ginger garlic paste – 1 table spoon

Butter – As per requirement

Chili powder – 1 table spoon

Bread – 4 Nos

Preparation Method for Brinjal Bread Rolls

Take the brinjal and cut them horizontally. Later cut them in to square cubes. In a flat bowl take the rice powder, corn flour and one table spoon of chili powder. Add water and mix well. Add one table spoon of ginger garlic paste in it. Add one table spoon of tomato paste in to. Add little salt in it. Mix well. Add the cut brinjal cubes in the mixture and mix it well and keep it aside for ten minutes.

Take a frying pan and add oil in it. Once it gets heated add the brinjal content and fry well. The content should be fried until the brinjal turns golden brown. After five minutes remove the pan from the stove and keep it aside.

Take a bread piece and cut the edges. Apply butter to one side of the bread and spread well. Add the brinjal content to the bread and roll it smoothly. The bread could be toasted a little if required. Now the Brinjal Bread Rolls are ready to be served.

This would be an ideal evening snack and children would love to eat it. This dish would go well with tomato sauce and all kinds of chutneys.

Ingredients for preparing Hot Chili Potato Masala

Potatoes – 250 Gms

Green Chilies – 5 Nos

Rice flour – 1 Cup

Coriander leaves – Little

Chili sauce – 1 Table spoon

Tomato sauce – 1 Table spoon

Ginger Garlic Paste – 1 Table spoon

Pepper powder – ½ table spoon

Salt – As per requirement

Oil – 3 Table spoon

 

Preparation Method for Hot Chili Potato Masala

Boil the potatoes well and remove the skin. Cut the potatoes into cubes. Taka flat bowl and add the plain flour in it. Take one cup of water and mix it well with the flour. Add some salt to the mixture. In a frying pan add five table spoons of oil and heat well. Add one table spoon of ginger garlic paste in the oil and fry well.

Add the chilies in the pan (the chilies should be cut vertically). Fry the content well. Dip each piece of potato in the flour mixture and put them in the frying pan. Add some salt and fry well. Add one table spoon of chili sauce and tomato sauce in the content and fry well. Add half table spoon of pepper powder and again fry well. Fry the content well for five minutes.

Later remove the pan and add the finely chopped coriander leaves in it to garnish the content. This dish would taste great with chapattis, parathas and white rice. The preparation time for this dish is less than 15 minutes.
