Rava Idly with Oats
Ingredients for Rava Idly with Oats
Oats – 1 cup
Rava – 1 cup
Curd – 2 cups
Carrot – 1 (Small)
Peas - ¼ cup
Beans – 4 Nos
Urad Dhal – little
Chana dhal – little
Coriander leaves - little
Oil – As per requirement
Salt – As per requirement
Preparing Rava Idly with Oats:
Take 2 cups of curd and beat it well. Add one cup of roasted to it. Let it soak for ten minutes. After ten minutes add one cup of oats to it and let it soak in it for another ten minutes. Add the boiled and cut carrot, beans and peas to it.
Mix all the vegetable in the curd well. In a small frying pan add oil and fry urad dhal, chana dhal and mustard seeds. After frying it add it to the mixture and mix well. Add salt to the mixture and mix well.
Take the idly cooker and add oil to the plate. This will avoid the rava idly from sticking to the plate. Pour the batter in each place and place it in the stove for ten minutes. Once it is done garnish the idly with finely cut coriander leaves.
This idly could be served with any chutney. This is a very healthy combination since it contains rava, oats and vegetables. The Rava idly with oats could be had as a morning breakfast or for dinner.

Pudhina Rice
Ingredients for Pudhina Rice:
Pudhina Leaves – 2 Cups
Boiled rice – 4 cups
Onion Big – 1 (Small)
Red Chilli – 3 Nos
Grated Coconut – 1cup
Tamarind juice – 1 Table spoon
Ginger – Little
Mustard seeds – Little
Channa dhal - Little
Oil – As per requirement
Salt – As per requirement
Preparation Method for Pudhina Rice :
Take two cups of pudhina and wash it well. Add two table spoons of oil in a frying pan. Add the cut onions and red chilies into the pan and fry well. Add a small piece of ginger to the content. Also add the grated coconut and fry well. Add the tamarind juice to the content. After frying for three minutes, remove the pan from the stove and allow the contents to cool.
In a mixer add the contents and grind well. Grind the content till it becomes a paste. Once it is done remove it from the mixer. In a small pan take one table spoon of oil and heat it. Add mustard seeds to it along with channa dhal. After one minute remove it from the flame and add it to the pudhina paste and mix well. Add salt to the content and mix well.
Take four cups of hot boiled rice in a flat vessel and spread the pudhina paste in it and mix well. Mix the paste well till there are no rice lumps. Add one spoon of oil to the rice if required. Healthy and tasty pudhina rice is ready to be served.
Pudhina rice is easy to prepare and it would be a very good alternative to the traditional coconut, tamarind, tomato and curd rice.

Egg – Corn Salad
Ingredients for Egg – Corn Salad
Egg – 2 Nos
Corn – 2 Cups
Carrot – 1 No
Coriander leaves – Little
Mustard sauce – 1 table spoon
Curd – 1 cup
Salt – As per requirement
Preparation Method for Egg-Corn Salad
Boil the two eggs and cut them horizontally into small slices and keep it aside. Take two cups of corn and boil it well. Finely grate the carrot. In a bowl add the boiled corn and add one cup of curd to it and mix well. Add salt as per requirement to the content.
Add the grated carrot to the content and mix well. Add one table spoon of mustard sauce and mix well. Finally add the egg slices to the content and don’t mix too much since they will break. Garnish it with the coriander leaves. Now the Egg corn salad is ready to eat.
This salad is very healthy since it has eggs, corn and carrot. This salad is easy to prepare and it does not take more than ten minutes. Children would love to eat this salad since it has corn and would be very tasty. This salad is ideal for children who refuse to take egg in their daily diet.

Banana Bread Spread
Ingredients for preparing Banana Bread spread
Bread slices – 4 Nos
Banana – 4 Nos
Egg – 1 No
Sugar – 4 Table spoon
Salt – A Small Pinch
Ghee – 3 Table spoons
Cheese – 1 No
Preparation Method for Banana Bread Spread
Take four ripe bananas and put them in a flat bowl. Add a small pinch of salt in it. Add four table spoons of sugar in it and mix well. Blend the banana well with the sugar. In a separate bowl beat the egg well and add it to the banana content.
Take the bread slices and cut the corners. In a frying pan add two table spoons of ghee and fry the bread on both sides. In another frying pan add the banana content and heat it well for five minutes. Remove it from the flame and allow it to cool.
Take a single bread slice and add cheese slice to it. Spread the content above the cheese well. Now take another bread slice and close it. Now the banana bread spread is ready to eat. Preparing the banana bread spread is very easy and it has the goodness of fruit, egg and bread.
Children would love to eat this sweetened dish. This dish could be prepared for break fast or for evening snacks. This dish would taste great with sweet tomato sauce.

Mint Lemon Juice
Ingredients for Mint Lemon Juice
Mint leaves – 2 cups
Coriander leaves – 1 cup
Curry leaves – 1 cup
Pepper powder – 1 tea spoon
Ginger powder – 1 tea spoon
Salt – As per requirement
Lemon juice – 4 table spoons
Preparation method for Mint Lemon Juice
Take two cups of mint leaves, 1 cup of coriander leaves and 1 cup of curry leaves. Put them in a mixer after washing it thoroughly. Add three cups of water and grind well. Grind the mixture till the dark green juice comes out.
Remove the mixer the transfer the juice into a bowl by filtering it. The filter will stop the residue and let the juice in the bowl. Now add salt to it, followed by pepper and ginger power. Add four table spoons of lemon juice to the bowl and mix well. The mint lemon juice is ready to be served.
This juice has the healthy benefits of mint leaves, curry leaves and lemon. Mint leaves, curry leaves, coriander leaves are very good for the body. Ginger power increases the digestion power. Lemon when added with it improves the taste and gives the benefit of citrus.
This juice could be served by adding sugar instead of pepper, ginger and salt. Both the combinations would be very tasty. The first type will be very good for the people who are cautious about their calories. Where as the later could be given to children. This juice would be a very healthy alternative to traditional juices.

Carrot Rasam
Ingredients for preparing Carrot Rasam
Carrot - 1 No
Tomato - 1 No (Medium Sized)
Toor Dhal - 50 Gms
Green Chilies - 2 Nos
Turmeric - Little
Lemon Juice - ¼ cup
Mustard seeds - Little
Coriander Leaves - Little
Oil - As per requirement
Salt - As per requirement
Preparation Method for Carrot Rasam
Pressure cook the carrot and tomato and make a puree of them. Boil the toor dhal in 2 cups of water and drain the water. In a flat bottomed vessel take two table spoons of oil and heat it. Add the mustard seeds in it.
Add the green chilies in it and fry well. After two minutes add the toor dhal water in it and mix well. Add salt to the content. After two minutes add the puree mixture and mix well. Add a pinch of turmeric in the content and stir well.
After five minutes remove the vessel from the flame. Add the lemon juice in the content and mix well. The lemon juice has to be added only after the vessel is removed from the flame. Add the finely chopped coriander leaves in the content and garnish well.
The carrot rasam is ready to be served with hot rice. This rasam is very healthy since it contains carrot and lemon. It also tastes great.

Mango Badam Halwa
Ingredients for Mango Badam Halwa
Mango – 1 (Medium Sized)
Badam Powder – 1 cup
Sugar – 2 cups
Milk – 1 cup
Cashews – 10 Nos
Raisins – 10 Nos
Cardamom Powder – Little
Ghee – 2 Table spoons
Preparation method for Mango Badam Halwa
Cut the mango into small pieces after removing its skin and grind it well. Grind the mango well till it becomes a paste. Take a thick bottomed vessel and add one spoon of ghee to it. Add the finely grinded mango paste to it and heat it well. Add sugar to the content and mix well. Add one cup of badam power to the content and mix well.
Take one cup of milk and boil it well. Add the boiled milk to the content and mix well. In another frying pan add one table spoon of ghee and fry the cashews and raisins well. Add the cashew and raisins to the mango content after frying it well. Add a pinch of cardamom powder and mix well. Remove the vessel from the flame after two minutes.
Delicious Mango Badam halwa is ready to eat. This halwa has the goodness of a fruit (mango) and nut (Badam). Preparing this halwa is very easy and it consumes only less time for preparing.

Healthy Oats Potato Snacks
Ingredients for Oats-Potato Snacks
Oats – 250 gms
Potato – 250 gms
Carrot – 1 (Medium)
Beans – 4 Nos
Peas – 50 gms
Green Chilies – 2 Nos
Ginger – little
Pepper powder – little
Salt – As per requirement
Coriander leaves – little
Oil – As per requirement
How to Prepare Oats-Potato Snack
Boil the potatoes, carrot, beans and green peas in a heavy bottomed vessel or pressure cook it for ten minutes till it becomes soft. Later remove it from the flame and leave it aside till it reaches the room temperature.
Once it cools down smash all the vegetables together well. After smashing it well add the oats to it and mix well. Oats should mix well with the smashed vegetables. There should not be any lumps in the mixture. Also add finely cut green chilies to the mixture.
Add salt to the mixture. Also add little pepper powder to the mixture (Do not add too much of pepper since we have already added green chilies). Take a small piece ginger and clean it. Cut the ginger into small pieces and add it to the mixture (Ginger powder can also be used). After mixing well the mixture should be left aside for two minutes.
Take a frying pan, add oil and heat it. Take a small portion of the mixture and put it in your palms and press it with your other palm. This will result in a circular shape. Fine tune the edges and drop in the oil carefully. Fry it till it becomes golden brown. Now the Oats-Potato snack is ready to be served.
This snack can be made in a very quick time and hence it is a very good evening snacks. It has the goodness of all the vegetables like carrot, beans, potato and green peas. It also contains oats, which is supposed to be a very good cereal. Oats contains lot of fiber and it is very healthy.

Bread Egg Dip
Ingredients for Bread –Egg Dip:
Bread : 4 slices
Egg: 2 Nos
Milk: 1 Cup
Sugar: 2 table spoon
Ghee : 2 table spoon
Preparation steps of Bread-Egg Dip:
Take the bread and cut the edges. Take a frying pan and add 2 table spoons of ghee. Fry each bread for 30 seconds. Once it is done remove the bread from the pan and place them in a plate.
In a vessel take two egg and mix them well. Take one cup of boiled milk (the milk should be at room temperature) and add it to the egg mix. Add two table spoons of sugar and mix well. The mixture should be mixed well. Once the mixture is ready leave it aside for ten min.
After ten minutes take a bread slice and dip it in the mixture (both sides). Take a tawa and place the bread in it and fry it till it becomes golden brown. The bread needs to be fried both sides. Repeat the same for all the breads.
The Bread-Egg Dip is ready to be served. It could be served with tomato sauce. This is a very healthy food and it could be had as a break fast. Since this dish has sugar it would be very tasty and children would love to eat it. This dish could be had as an evening snack too.

Palak Potato Masala
Ingredients for Palak Potato Masala
Palak Spinach – 1
Potato – 250 gms
Onion – 1 (Big)
Green Chilies – 3 Nos
Oil – As per requirement
Salt – As per requirement
Pepper – Little
Preparing Method for Palak Potato Masala :
Clean the palak leaves properly and wash them in running water. Boil the palak leaves in hot water (One cup) along with chopped onion and green chilies. Once the palak is boiled well, remove it from the stove and keep it aside. Once it becomes cool, put it in the mixer and grind it well. Add one table spoon of ghee to the palak if required.
Boil the potatoes in a pressure cooker or in a deep bottomed vessel. Once the potato is boiled, cut it in to medium sized pieces (Do not remove the skin). Take a frying pan and add little oil to it. Once the oil is heated add the potatoes to it. Also add pepper powder and salt to it. Fry it for three minutes.
After three minutes add the grinded palak to the potato mix and mix well. Leave it on for two minutes in low flame. After two minutes, mix the masala well. The Palak Potato mix is ready to be served. This dish has the goodness of spinach and potato. This could be a very good side dish for chappatis, parathas and it could be had even with rice.

LEMON RASAM
Ingredients for lemon rasam:
Lemon: 1 (Medium)
Toor Dhal: 50 gms
Green Chilies: 2 Nos
Pepper powder: Little
Cumin seeds: Little
Curry Leaves: Little
Coriander Leaves: Little
Salt: As per requirement
Oil: 2 table spoons
Preparing Lemon Rasam
Wash the toor dhal in running water and drain it. Take a pressure cooker or a heavy bottomed vessel and boil the toor dhal by pouring two glasses of water in it. Allow it to cook for fifteen minutes in the vessel. In case of pressure cooker, let the dhal cook for five minutes. After the cooking period, put the flame off and wait until the pressure goes down. Drain the dhal water in a vessel and keep it aside.
Take a kadai or a deep frying pan and pour two table spoon of oil in it. Add the cumin seeds and the chopped green chilies. Add the curry leaves and fry well. Add the pepper powder (little) and salt. Fry for two minutes and add the dhal water to this mixture. Let it boil well for three minutes.
Remove the vessel from the stove and add the juice of one medium sized lemon to it. Mix well and add the finely chopped coriander leaves to it. The lemon juice should be added after the vessel is taken out from the stove.
This lemon rasam is very healthy since it has dhal and lemon along with pepper. The preparation time is also very less.
