It is really important to give the right nutritious food for the infants. This nutritious food will help the development of the baby both physically and mentally. Given below are the foods which can be given to the babies once they turn four months. Till four months it is strongly advisable to give only mother’s milk and that will suffice the need of the baby. After four months one can start introducing solid and semi solid food to the babies. The first food one can start is with rice liquid. We can get the baby starter food (Rice) in many packed form but it is better to prepare at and it is very easy too. Take a cup of rice wash it in water, then dry it well under the sun and put it in a mixer and make it a powder. When ever you want to prepare the rice liquid for the baby take one spoon of rice powder mix it in water and boil it for few minutes till it turns semi solid. Add a pinch of salt to it. This first food is a very healthy choice for the babies.

Later fruits and vegetable can be given in boiled form. To start with vegetables one can give potato, peas, carrot, beans, and beetroot. It’s always good to start with one vegetable at a time. For example start with potato on a day and continue it for the next four days before starting with the new vegetable. These four days of time will help one to know whether the vegetable is accepted with the baby’s body or its showing any allergic reactions. The vegetable has to boil well in half glass of water then it should be smashed well. It’s ok to add a pinch of salt to it. Fruits like apple, banana can be given in the similar format by boiling it for some time and then smashing it.

Ragi powder can be boiled by mixing it with water and can be given to the babies. They are good source of iron and calcium. Toor dhal can be boiled and only the water can be given to the babies as it is a good source of protein. After nine months one can start with solid foods like idly, rice etc. When giving idly one can combine it with curd and offer it to the babies. The curd should be fresh. The health mix power which has a combination of ragi, rice, corn, peanut and many more are available in the stores and this could be given to the babies. This has lot of fiber and strengthens the bones.

It is good to start with bakery products like bread, biscuits and chocolates after one year. Orange juice and pomegranate juice can be given to the babies during day time. Remember the juice should be prepared fresh and little amount of sugar can added to it. Try to avoid fatty foods since they will put on weight and create problems in the later stage. A healthy and nutritious food will support the babies in their fabulous growth

Moong dal Pakoda is also called as Moong dal Vada, Green Gram Vada or Green Gram Fritter. This pakoda will be great dish during evening. Within from the say that it is a good snack item and even healthy for your health. As we all know that Green gram consist of various health benefits which can provide required vitamins and minerals.
Ingredients:

  • 2 cup Moong dal
  • 1 number onion chopped
  • 1 cup spring onions.
  • 4 number green chillis
  • 1 bunch coriander leaves
  • 1 bunch curry leaves
  • 1 number ginger
  • 1 tbs cumin seeds
  • to fry Oil
  • as needed salt

Preparation of Moong dal Vada:
for preparing this vada, you need to take the splatted Moon Dal which is so before more than one hour. You must soak this Dal just for one hour, if not the skin will be separated from the dal.  See that this Green gram has green skin on it because it can give a unique texture and excellent taste for your dish. Now you can take this moong dal into the mixer and grind it for 1 min. This dal must be grinded coarsely, it must not become become smooth paste. If this mixture is  coarse then only you can get the tasty vada. 
Now you can add cumin seeds, chopped onions, chopped ginger, chortle Curry leaves, chopped coriander, spring onions, crashed chilli and salt. Mix this mixture well. Now you can make small dumplings and put in the hot oil. Now you can remove it from the oil and put it on the paper towel so that it will remove the excess oil from the dish. Now you can enjoy the crispy Moong dal Vada.

Bagara Baigan

Ingredients for Brinjal Curry:
1 stick  cinnamon small 
8 number brinjals
3 number Cloves
1 tbsp coriander pdr
1 tbsp cumin pdr
1 tsp cumin seeds
2 tbsp Dry coconut powder
3 number Elaichi
1/2 tsp Ginger and garlic paste
1 number Green chilli
1 cup Groundnuts
1 tsp mustard seeds
2 tbsp Oil
1 number Onion
3 tbsp sesame seeds
50 ml Tamarind juice
3 cup Water
Preparation method for Brinjal Curry:
Today we are going to tell about how to cook my favorite egg plant curry (brinjal curry) with small egg plant ( brinjal, baigan). It has many names like Bagara Baigan (or) brinjal Curry/Gravy (or) Eggplant Curry/Gravy. While making veg. biryani or chicken biryani, the dish won't be completed without this brinjal curry. This dish has a specially, if you put baigan it becomes bagara baigan. Similarly you can replace this baingan with chilly called as Mirchi ka Salan or even add both mirchi and brinjal which is called as baigan mirchi ka salan.

To prepare this delicious dish we need to cut the brinjal into four parts keeping the stem. When whole part will be cooked this part becomes delicious. Roast the peanuts in little oil ( three table spoon) and add Sesame Seed when peanuts are 70% done and gets golden in color. Add Coconut powder and grind it by pouring little water. See that the grinder mixture wont be grinded into much finer paste ( if it becomes finer, it takes longer time to cook).

Fry brinjal in the oil, see that it wont be cut so earlier. If it is done so the oil brinjal comes darker when brinjals are fried in it( this is due to oxidation. Cook it until it is 70% done. Eggplant becomes softer when it is cooked. Rest 30% must be cooked in the gravy.

Take oil in a pan and add whole garam masala (Whole garam masala means it includes cloves, elachi, cinnamon), mustard seeds, cumin seeds, fengreek seeds ( remember that adding more fengreek seeds will make the gravy bitter.) , onions, salt( salt helps in cooking the onion faster and soft), curry leaves. When this onions become golden in color, add little turmeric powder, ginger garlic paste and little water as it becomes dryer. Now you can add 1 table spoon of coriander powder, dhanya powder ( coriander powder), half a tea spoon of chilly powder and bring it to a boil. Then you can add the mixture which we have pasted at the beginning. Keep stir it after adding the mixture. When it starts to boil, it sprinkles. So, cover it with a lid ( Cook it in small flame and stir it continuously so that masala won't get burnt) . When oil squeezes out of the gravy add tamarind juice, little Sugar and salt. Put those fried brinjal and cover it with lid and let it cook for 15 minutes in lower flame.

It goes well with Hyderabadi Chicken biryani. It is the Famous Hyderabadi Dish

Ingredients for Oats Payasam

Oats – 1 Cup
Milk – 4 Cups
Sugar – 2 Cups
Cashews – 5 Nos
Raisins – 5 Nos
Ghee – 2 Table spoons
Elachi Powder – Little

Preparation method for Oats payasam

Take one cup of oats and boil it in two cups of water. Boil the contents for five minutes. After five minutes, allow the content to cool. Take four cups of milk and boil it. After the milk boils add the oats to it without draining the water. Add 2 cups of sugar to the content and mix well. Slow down the flame. Add a pinch of elachi powder to the content.
Take a heavy bottomed vessel and add two table spoons of ghee to it. Add the cashew and raisins to it and fry well. Fry the content till the cashews and raisins gets fried well. Later remove the fried items and add it to the boiling oats. Mix the content well and remove the vessel after one minute. The milk should be in liquid form since it would become semi solid once it cools downs. The healthy and tasty Oats Payasam is ready to be served.
Oats is a very good cereal and it has essential fiber content. Oats has the power to reduce cholesterol and prevent the cholesterol from raising. This payasam has the goodness of oats and milk.

Preparation method for Red Banana Milk Shake:

Boil 4 cups of milk and leave it to cool. Take a red banana and cut it into small pieces and grind it well in a mixer. Add the milk to the mixer and grind well. Add half cup of cup to it and mix well. Remove the content from the jar and place it in a bowl.

Add a pinch of elachi powder to the content and stir well. Add ice cubes to the content. Now the red banana milk shake is ready to be served.

It's the time to add sugar into it. When you add this just stir it well. The sugar melts into the Bambino and you can able to find the excellent smile that comes out of it. Now you can add fried cashew nut, kishmish and elachi into it.
If you add kesari colour, then you will get a nice red colour to your dish. If not you will get a white kesari.

Ingredients:

  • 1 number Onions,
  • 1 tomato,
  • 4 eggscoconut,
  • 1/2 tbs ginger garlic paste,
  • 1/2 dhanya powder
  • 1 tbs Chilly Powder,
  • 1/2 tbs garam masala,
  • 12 cashew nut.
  • 1 tbs pepper powder.
  • 1/2 tbs cumin seeds,
  • coconut,
  • salt to taste,
Preparation method of Egg masala:
take a pan, add two tablespoon of oil. Let it heat up and now you can able to add the chopped onions into it and let it fry for at least 3 min and see that the onions become transparent when it cooked well.
Before that just make a paste of coconut, cashew nut, tomato, cumin seeds and keep it aside.
When the onions get cooked well at the time you can able to add the paste which is prepared about. Now let it come to a boil now you can able to add the other ingredients such as cumin powder, dhanya powder, chilli powder, salt, garam masala.  Stire it well and let it boil until the nice smell comes out of that. Now you can pour some oil into it. Now you can able to just break up the eggs and just pour them when the masala is hot enough on the stove. Don't disturb this eggs with spatula. And, it with the lid. After 5 min just turn the egg into other site and let it cook well. Now you can switch of the flame. Now you can remove the eggs from the masala add spread some pepper powder on it. Serve this egg masala to your family members.

South Indian Chicken Gravy

Everyone loves to have a delicious chicken on their weekends. If they want to have a wonderful dish then here is a recipe for you. South Indian chicken is really more spicy and wonderful to taste it. It is also called as South Indian Chicken Curry or south Indian chicken gravy.
Ingredients : 

  • 500 grams Chicken
  • 2 medium onions
  • 2 medium tomatos
  • small ginger
  • 3-4 green chilles
  • half piece of coconut
  • 3-5 chilles
  • bay leaves
  • 6 -7 cashew nuts
  • ginger garlic paste
  • half tbsp jeera
  • half tbsp turmeric
  • 2 tbsp chilli powder
  • 3 -4 tbsp oil
  • salt to taste
Preparation of Spicy South Indian Chicken Gravy: Finely chop onions, tomatoes and ginger and place it separately. cut the coconut into small pieces. put it into a mixer add the cashew nuts an 2 or 3 green chilles, grind it into a fine paste for 2 - 3 minutes and keep it aside.

Take a cooker, add 2 or 3 tbsp of oil and add 2 or 3 bay leaves, jeera, and green chilles.Now add finely chopped onions,tomatoes and ginger and fry till the onions turns fried red. Now add the prepared coconut & cashew paste. Add chilli power, turmeric powder and salt to taste. close cooker lid and wait for 4 minutes to cooker to whistle, turn the stove to medium flame and wait for 2 more minutes still the pressure goes off and open the lid add coriander leaves and oil and serve it hot with rice or rotties.

Sweet Appam

Sweet appam is a delicious sweet prepared during diwali. This sweet will be very soft and tasty. They are sure to be liked by all the members in the family. This sweet Appam can be stored for many days and can be consumed.

Ingredients:

Maida Flour – 1 Cup
Sugar – 1 cup
Egg – 2 Nos
Banana – 2 Nos (Small ones)
Elachi – 5 Nos
Ghee – ½ Cup

Preparation:

Take the maida flour in a non-stick vessel and add sugar to it. Make it into batter by adding water to it slowly. Take a cup and beat the eggs well. Add the eggs in the batter and mix well. Crush the bananas well and add them in the batter. Crush the elachi and add them to the batter and mix well. The batter should not be very thick or loose. It should be semi solid. Leave the batter aside for half and hour.

After half an hour take a flat frying pan and heat it. Now take the batter and pour in the pan in the shape of small dosas. The size of the appam should be not bigger than our palm. Pour ghee on top of the appam and to its sides and let it fry well. Turn the appam and fry well the color changes to golden brown.

Once the appam is cooked well remove it from the pan and it is ready to be served. This tender and soft appam will definitely be enjoyed by all the kids and elders. This appam could also be prepared with wheat flour or ragi flour instead of the maida flour. The preparation method is the same for both wheat and ragi flour. This sweet would be a healthy choice too since it contains eggs and banana.

Note : This sweet can be prepared with out the eggs too.

Diwali Sweets and Snacks Thattai

Thattai is a traditional snack prepared during diwali. The lighter and crispier thattai will be definitely loved by all the elders and children. This snack could be prepared using the readily available ingredients in our home. The ingredients involved in the preparation are very simple and are sure to be available in everyone’s house.

Ingredients:

Rice flour – 1 cup
Urad dhal – 2 table spoon
Fried Bengal gram – 2 table spoon
Channa dhal– 2 table spoon
White sesame seeds – 1 tea spoon
Chilli powder – 1 table spoon
Ghee – 2 table spoon
Salt – As per requirement
Asafoedita – A small pinch
Oil – For frying
Plastic paper – medium size

Preparation:

In a flat bottomed vessel add the rice flour and fry it for 2 to 3 minutes. Keep the rice flour aside. Now add the urad dhal, fried Bengal gram, channa dhal and fry them well in low flame. They have to be mixed well and fried. Do not over fry them since that would change the taste of the dish. Frying them for three to four minutes would suffice. Later cool them well and make a powder by grinding them in a mixer.

Now in a non- stick vessel (the non-stick vessel is better because the flour wont stick to the vessel when kneaded) add the rice flour along with the powdered ingredients. Add the white sesame seeds, chilli powder, ghee and asafoedita along with salt. Mix them well by adding water. Be very careful while adding water since the dough should not be very
loose.

Take the plastic paper and apply oil to it (so that the dough doesn’t stick to it). Make small balls with the dough (apply oil to the hands while making the balls) and flatten them in the paper. Remember the thinner the dough the crispier the thattai.

Boil oil in frying pan and put it in medium flame. Now slowly transfer the dough from the paper to the pan. Leave the pan in medium flame. Fry them well. Remove them from the pan when they turn golden brown and place them in a container. Cover the container after few minutes. Now the tastier and crispier thattai are ready to the served.

They go very well as an evening snack and also along with rice. The preparation time would be 20 to 30 minutes depending on one’s speed. But this is a very easy and quick snack.

Groundnut Chikki with Jaggery

Jaggery is one of the ingredients with which you can able to prepare various sweet dishes such as paayasam, Modak and many more. Do you know that Jaggery also contains the healthy ingredients like iron. But, the Jaggery which is available in the market consist of sand. So it is better to clean before using it.

Ingredients for preparing peanut chikki:

500 gram Jaggery,

50 ML water,

half cup peanuts,

two tablespoon ghee,

one tablespoon oil.

Preparation method of peanut chikki:

filter the Jaggery:

take a nonstick pan on medium heat. Now you can add Jaggery with one by fourth cup of water. Within 15 min, Jaggery will melt fully and get dissolved and becomes into a smooth solution without any lump. When you find lots of bubbles on the top of Jaggery, at the time, you can just switch on the stump and filled it with the iron sieve. Now let it cool until it becomes to room temperature. You can even store them into a plastic container and place it in the refrigerator for later use.

Preparation of groundnut chikki:

just heat up a pan, and dry roast peanuts without adding any oil until it becomes crispy. Keep it aside for 20 min and gently remove the skin of the peanuts. By dry roasting the peanuts, you can very easily remove the skin of it.

Just apply oil on a plate and keep it ready a side. Now take a nonstick pan, add two tablespoon of ghee and melted jaggery. Let it boil on low heat for 10 min continuously. It automatically becomes thicker and now you can add roasted groundnut onto it. Now you must just cook it for 5 to 7 min and if you cook for more minutes, it may become hard mixture and it is difficult to spread on the plate.

Now you can put the content onto the plate. When it gets cold down, cut it into a square shape and you can have them has the snacks.

You can even prepare groundnut chikki in an microwave.

Home Made Chicken Momo’s

It’s a famous tibetian recipe. This is one of my most favourites as it has got lots of meat !! But the reason behind naming it as “Indo-Tibetian chicken momo “ is combining the tastes of Rich Indian masalas and tibetian ingredients. Lets see the ingredients required for this recipe:

1) Wrapper :

  • 2 cups of Maida
  • ¾ cup of water

2) Filling :

  • 500g minced chicken
  • 2-3 onions
  • 1 tbsp fresh crushed ginger
  • 1 1/2 tbsp crushed garlic
  • 1 1/2 tsp salt Handful of coriander
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 2 green chillies (remove seeds for less spice)
  • 2 tsp garam masala
  • 2 tbsp oil

DIRECTIONS :

1) Finely chop all the filling ingredients and mix together . pour 2 tbsp of oil in a pan and fry this mixture , followed by it add 2 tbsp of soy sauce + 1 tbsp of vinegar and sprinkle 1 tsp of garam masala + salt to taste. Mix it well and cook it for 10 mins.clip_image004

2) Mix the wrapper ingredients to make a dough. Roll the dough and make circles 6-10 cm across.

3) Place a scoop of mixture in the middle of each circle and wet the edges to glue easier. Stick the sides together strongly to stop leakage.

4) If u have a steamer pour some water into it and place these filled momos onto the plates and steam it for 10 mins. If u don’t have a steamer we can use Idli cooker and then filled momos can be placed onto the idli plates.

5) After 10 mins momos would be ready to serve. U may serve it with some Red hot chilli sauce or Tomato sauce.

Eggless vanilla sponge cake with milkmaid condensed milk

Many people think that preparing the cake at home is really very difficult. But in fact, it is really very easy because you can able to get various ready-made products in the market. You already might have heard about the milkmaid condensed milk which is available in various supermarkets. If you get that, you can able to prepare the eggless cake when easily at home.

Eggless vanilla sponge cake Ingredients:

  • 1 cup of maida,
  • 1 1/2 tablespoon of baking powder,
  • 75 ML water,
  • half tablespoon of cooking soda,
  • 200 g of milkmaid condensed milk,
  • 70 ML of melted butter
  • one tablespoon of vanilla essence.

Preparation method of home-made Eggless vanilla sponge cake:

  • take the flour, baking powder and cooking soda together and keep it as it (content 1) .
  • In another bowl, just combine the condensed milk, melted butter and vanilla essence with a 75 ML of water and stir it well.
  • It's both the above mixture and well with spatula and the batter should be in drooping consistency.
  • Take a microwave oven plate and apply all on it. Now you can pour the batter and bake it in preheated over at 200° for 10 min. After that, you can reduce the temperature and bake it up to 150° for another 15 min.
  • Now it is ready and you can remove it from the over and keep it aside for 1 min. Just invert the plate and tap sharply to unmold the cake.
  • You can serve this to your kids when they come after their school.
