Ingredients for preparing Carrot Soya Masala

Carrot – 2 (Medium Sized)

Soya – 50 Gms

Onion – 1 (big)

Tomato – 2 Nos

Ginger – Small piece

Garlic – 5 Nos

Green Chilies – 3 Nos

Mint leaves – ½ Cup

Coriander leaves – little

Pepper – ½ Table spoon

Butter – 2 Table spoon

Salt – As per requirement

 

Preparation Method for Carrot Soya Masala

Soak the soya in boiling water for fifteen minutes. Later drain the water and squeeze the soya and leave it aside. Finely chop the onions and green chilies. Make a paste of ginger and garlic. Remove the skin of the carrot and grate it well. Make a paste of the tomatoes and keep it aside.

Take a thick bottomed vessel and add two table spoons of butter in it. Add the finely chopped onions to it and salute well. Later add the green chilies and fry well. Add the ginger garlic paste to the content and mix well. Add the tomato paste and mix well. Add salt. Add the chopped mint leaves. Also add the pepper powder and mix well.

Now add the grated carrot to the content and slow down the flame. After three minutes add the soya (drained and squeezed) and mix well. Mix the content well and put off the flame after five minutes.

Take a flat bowl and transfer the content into it. Add the coriander leaves and garnish the dish. This dish has the goodness of carrot and soya. This would be a very good side dish for chapattis, rotis and even rice.
