Brinjal is one of the wonderful vegetable with which we can prepare different varieties of dish. Now I'm like to tell about the Kathirikai Varuval which is prepared by using coconut powder. It is a delicious brinjal dish which just melts into the mouth. Preparing this dish is also very easy and it takes just 15 min.
Ingredients needed for Vankaya Vepudu :

  • half tablespoon mustard seeds,
  • half tablespoon urad dal,
  • 2 to 3 green chilli,
  • 5 to 10 curry leaves,
  • 3 brinjal which is cut into tiny pieces,
  • salt to taste,
  • three tablespoon of coconut powder.
Preparation method of coconut Brinjal Fry:
take some water into a pan and boil it will now you can add the small pieces of bring joy into it until it gets semi-soft. Now you can remove it from the water and let it dry for half an hour.
Now take a kadai, add two tablespoon of oil, mustard seeds, urad dal, green chilli pieces, curry leaves and try it for 2 min. Now you can add the brinjal pieces into it and fry for 5 min. Add salt as per the taste. When it becomes soft, add the coconut powder into it and remove it from the flame. Now you can serve this with the rice and mudda pappu.
